  • 2 cups of self raising flour
  • 1 scoop (15g) Musashi Lean WPI
  • 2 eggs
  • 1 cup of Greek low fat yogurt
  • 60g soft butter 
  • 2 handfuls of blueberries
  • 6g white chia seeds
  • ¼ cup raw sugar 
  1. Preheat oven to 180c/ 160 fan-forced
  2. Place all of the dry ingredients (flour, chia seeds, sugar and protein powder) and blueberries into a mixing bowl and combine. 
  3. In a separate bowl whisk the eggs, butter and yogurt. 
  4. Combine the wet and dry ingredients together.
  5. Spoon ingredients into a muffin baking tray and place into the oven for 20-25min or until browned on top and a skewer comes out clean. 
  6. Leave to cool on a wire rack and serve. 

Note: Muffins can be stored in an airtight container for up to 2 days.
