Musashi P30 high protein carrot cake muffins

Makes 12 muffins

Per serve (1 muffin)

500g grated carrots (5 medium carrots) 

3 medium eggs 

1 level scoop of Musashi P30 High protein vanilla 

2 tsp cinnamon 

teaspoon nutmeg powder 

300g (2cups) almond meal (self raising flour used instead) 

50ml cold press olive oil 

160g natural honey 

1 cup of raisins 

1.5 tsps. Gluten free baking powder 

  1. Preheat the oven to 160c 
  2. Grate carrots and whisk the eggs. 
  3. Combine ingredients and mix well (carrots, eggs, Musashi P30 High Protein (vanilla), cinnamon, nutmeg, almond meal, oil, honey, raisins and baking powder) in a large bowl. 
  4. Divide ingredients into muffin trays (two trays of 6) 
  5. Place in the oven for approx. 50min or until cooked throughout. 
  6. Leave to cool before serving. 


Tip: for gluten free option use almond meal and gluten free baking powder. 

Optional toppings: serve plain or topped with whipped low fat ricotta.
